Great for a quick meal on a cold wintry day...
Ingredients:
2 pkg precooked chicken strips
1 can pinto beans
1 can black beans
1 can corn
1 can hominy
2 cans diced tomato with garlic (fire roasted)
1 pkg taco seasoning
2 pkg Hidden Valley Ranch dressing (milk)
1-2 tsp chicken bouillon
1 tomato soup can of water
Directions:
Cut up chicken strips into bite size pieces. Place ingredients in a large dutch oven or large soup pot. Add remaining ingredients. Bring to a low boil and simmer for 30 minutes. Garnish with a dollop of sour cream, diced avocado and cheese. Optional: crispy tortilla chips and chopped fresh cilantro.
